Crucian and carp were used to evaluate process and storge condition effects on yields of salt soluble protein (SSP). Extrction conditions included PH(5. 5、6. 0 and6. 5)
extraction volume (6、9、12、15 and 20x sample weight)
Storage conditions included postmorten aging (0℃ for 0、7 and 14 days) and freezing conditions (rapid freezing
slow freezing
and reezing -thawing -freezing). Highest yield of SSP Was obtained using PH 6. 0~6. 5
extraction Volume 15x smple weight both in crucianand carp. Freezing conditions did not affect measurement of SSP. Aging crucian and carp for 7 and 14 days postmortem resuced the yield of SSP.
